The Iberico pigs come from a long line, unbroken since 1879, and are subject to strictly controlled measures to ensure the purity of this inimitable breed worldwide. During the Montanera fattening period, the pigs grow at a slower rate, allowing fat to accumulate between their muscle fibers, which enhances the flavor and texture of the meat.
After this fattening process, the exceptional acorn-fed shoulder of Iberico ham is carefully cured for 18-36 months in Spain. These shoulders are then brought to the United States, where they are hand-carved by the Cinco Jotas Master Carver. From the moment the pigs are raised to the final plating, no part of the process is hurried. Each step is carefully perfected to ensure the highest quality and unparalleled flavor.
